Instructions
Prepare the crust
Preheat your oven to 325°F (160°C).
In a medium bowl, mix together the chocolate graham cracker crumbs, melted butter, and sugar.
Press the mixture into the bottom of a 9-inch springform pan evenly.
Bake for about 10 minutes. Remove and let cool.
Make the cheesecake filling
In a large bowl, beat the softened cream cheese until smooth using a hand mixer.
Add the sugar and vanilla extract, and continue mixing until well combined.
Add the eggs, one at a time, mixing on low speed after each addition.
Mix in the sour cream, cocoa powder, and red food coloring until fully incorporated.
Combine and bake
Pour the cheesecake filling over the cooled crust in the springform pan.
Smooth the top with a spatula.
Bake in the preheated oven for 60-70 minutes, or until the edges are set but the center still jiggles slightly.
Turn off the oven and leave the cheesecake inside for 1 hour. This helps prevent cracks.
Cool and chill
After an hour, remove the cheesecake from the oven. Let it cool at room temperature for about 30 minutes.
Then, refrigerate for at least 4 hours, or overnight for the best results.
Prepare the chocolate drizzle
In a microwave-safe bowl, combine the chocolate chips and heavy cream.
Microwave in 30-second increments, stirring in between, until fully melted and smooth.
Decorate
Once the cheesecake is chilled, carefully release it from the springform pan.
Drizzle the melted chocolate over the top in a decorative manner.
Optionally, add whipped cream and sprinkle with edible red glitter to enhance the spooky appearance.
Notes
Allow cheesecake to cool slowly in the oven after baking to minimize cracking. Always use room temperature ingredients for a smoother batter. Be precise with red food coloring.
