2tablespoonsolive oil
4clovesgarlic, minced
1cupheavy cream
1cupgrated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Lemon juice (optional)
Instructions
Cooking the Pasta
Start by boiling a large pot of salted water. Once boiling, add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
Preparing the Shrimp
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute or until fragrant.
Add the shrimp to the skillet. Cook for 2-3 minutes on each side until they turn pink. Season with salt and pepper.
Making the Sauce
Pour the heavy cream into the skillet and stir well to combine with the shrimp and garlic. Bring the mixture to a gentle simmer.
Gradually mix in the grated Parmesan cheese until melted and the sauce thickens. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
Combining and Serving
Toss in the cooked pasta and mix until well coated with the sauce. Top with chopped parsley and a squeeze of lemon juice if you like. Serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of cream or pasta water to help restore the sauce’s creamy consistency. Avoid overcooking the shrimp to prevent them from becoming rubbery.
