Cooking the Spaghetti
Boil a large pot of salted water. Add spaghetti and cook according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
Caramelizing the Onions
In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook slowly, stirring often, for about 20-30 minutes until they turn deep golden brown and caramelized.
Adding Garlic
Once the onions are caramelized, add the minced garlic to the pan. Cook for an additional 1-2 minutes until the garlic is fragrant but not burnt.
Combining Ingredients
Add the cooked spaghetti to the pan with the caramelized onions and garlic. Drizzle in the balsamic vinegar and the remaining olive oil. Toss everything together well, adding reserved pasta water if needed to make it creamy.
Serving
Taste and season with salt and pepper as needed. Serve immediately, garnished with fresh parsley and grated Parmesan cheese if desired.
Notes
Caramelizing onions takes time; do not rush. This dish can be made vegan by omitting the Parmesan cheese. Store leftovers in airtight containers in the refrigerator for up to 3-4 days or freeze for up to 3 months.
